Breakfast Corn Dogs

Sometimes, classes are boring.  So sometimes we talk about other things during boring classes.  This particular boring class we decided to talk about breakfast.  I think I probably brought up the subject as I was reading recipe blogs at the time...

I am a closet corn-dog lover.  Most of the time I hold high disdain for those who eat terrible, processed, bad-for-you food.  When it comes to corn-dogs, however, I am a total sucker.

I also adore breakfast. ADORE.

So when I found a recipe that could combine the two, I had to try it.

The recipe is here.

I cut the recipe in half since it was just two of us and we were making other breakfast foods as well.  I also cut the cooked sausage in half so they were more bites than corn dogs on a stick.
When I was making the pancake batter, I forgot to cut out the oil like the blog suggested.  Looking back, I definitely would have.  I think the batter might have tasted less oily.  Although it was still delicious.

You can tell we went all out - scrambled eggs made with an italian cheese blend and heavy cream instead of milk (I have some leftover from the peanut butter pie recipe); breakfast potatoes made with minced garlic, kosher salt, and dried parsley; and, of course, the corn dogs.  I ate my dipped in syrup, but my roommate had them plain and was a big fan.
