Poached Eggs and Potatoes

I've said it before and I'll say it again.  I love breakfast.  It may, in fact, be my favorite meal of the day.  Sometimes I like extravagant breakfasts but generally I'm quite content with eggs and potatoes.  There is something fully relaxing about eating eggs and potatoes, sipping on a cup of coffee, and reading my book on a lazy Saturday morning.

But today was a little more stressful than usual.  Today I was determined to poach an egg.  I've never done this before.  The concept frightens me.

I gave myself a 3 egg limit - after that I'd eat my potatoes and a piece of fruit.  However, I only needed to use two eggs because my first egg poaching session turned out to be a success.

I'd done tons of internet reading on proper techniques and such.  I ended up getting a pan full of water to an almost boil.  I stirred the water carefully, but quickly so that it was quite tornado like and then dropped the egg in.  For a terrifying moment, I thought it hadn't worked, but the because the water was swirling around, it automatically wrapped the whites around the yoke and cooked up.  I let each egg sit in the water, carefully stirring it, watching how fast it was boiling, for about a minute and a half.  They were deliciously runny and not watery on the inside at all.

Potatoes are simple.  Boil the cut up pieces until they are about halfway cooked.  Drain, and put into a pan of hot olive oil and sprinkle with whatever spices you'd prefer.  This time I used season salt.  Let them get all crispy on the outside, but because they were boiled, the inside is all soft.
