There are also a fair number of picnic tables scattered in the courtyard. When the weather is nice, we often have impromptu gatherings and generally someone always has food.
I made this bread and brought it into the backyard and we feasted. It was a big hit and someone asked if I'd put it on my blog. So here goes.
This bread is adapted from a recipe by Julie (see blog on left).
1-1/2 cups whole wheat flour
1 cup all-purpose flour
1/2 cup quick oats
3/4 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1-1/2 cups milk
1/4 cup canola oil
1 large egg
grated apple (peeled or unpeeled) - I used one and a half small apples and left the skin on.
a couple handfuls of fruit (fresh or dried) - I used fresh apple
1/2 cup of coarsely chopped nuts (optional) - I didn't use any
Preheat the oven to 350*.
In a large bowl, mix together all the dry ingredients. Make a well with the ingredients in the bowl and set aside. In a smaller bowl, mix together the milk, oil, egg, and grated apple. Pour the wet mixture into the dry well. Mix with a spoon. Add the chopped fruit (and nuts) and mix again.
Pour it all into a 9x5-inch loaf pan that has been sprayed or buttered. Bake for 1 hour, until the top is golden and the top is cracked.
Makes 1 loaf.
