Eggs and Leftovers

Last night I went to a nearby Irish pub with a dear friend of mine.  I drank Guinness and ate fries covered in curry sauce while we waited for our food.

I got a dish called Bangers and Mash - large sausages and thick mashed potatoes covered in thick gravy with cuts of carrots, zucchini, broccoli and cauliflower on the side.  There was a lot of food.  I couldn't eat it all, especially considering a glass of Guinness is a meal unto itself.

So, this morning, after getting up at 7:30 to scrape off my car and move it out of the parking lot so bulldozers could clear all the packed snow away, I found myself wanting a good breakfast.  Somehow, Bangers and Mash leftovers seemed like the perfect ingredients to fill an omelet.

So:  I threw the sausage, veggies, and potatoes into a skillet and let them heat up for a while.  I whisked two eggs with some milk and put them into a bigger skillet and let those cook for a while.  I put the bangers and mash onto the eggs.  I poured myself a cup of coffee.  I put in an episode of Lost.

And when that's over, I'm going shopping.

A pretty solid Saturday morning, I'd say :)
