I go through phases of eating.
Well. Two phases really.
1. Eat junk food and bask in its deliciousness. Who needs vegetables anyway?
2. Eat healthy food and bask in its deliciousness and the fact that I feel tons better when I'm not stuffing myself with chocolate and peanut butter and frozen pizza.
I am currently in the second phase. And it's great.
Steamed vegetables, fish and poultry, chickpeas, quinoa, and fresh herbs. Making everything from scratch. It's great. Moral of story - I think, at least for a while, I'll be mostly posting healthier recipes. Because I can. And because they are delicious.
Warning: around midterms and finals week, there will be a swing back into phase one. Because somehow, Burger King really does lessen stress. I can't explain it. Someone should do a study.
Anyway. I didn't take pictures, but it was delicious. I stole it from Julie's blog.
A Can of Chickpeas
Olive Oil
Lemon Juice
Fresh Parsley
Freshly Grated Parmesan Cheese
Drain and wash the chickpeas. Put into a bowl (preferably one with a lid) Add in about a tablespoon of olive oil, a tablespoon of lemon juice, and as much fresh parsley as you want. I pulled the parsley leaves off the stalks and gently chopped it.
That's it. You can eat it right away, or save it in the fridge for later. I wait to grate the cheese until I'm ready to eat the serving. Because otherwise the cheese gets soggy.
