Mom's Comforting Chicken Noodle Soup

It's been busy here, what with finishing seminary and graduating and all.  So, apologies for not posting for a while.  I have been cooking.  I've also promptly been forgetting to take pictures of it.

Anyway, this soup always makes me feel better about life.  It's warm and thick and delicious.  It's also not healthy for you.  But when you feel under the weather and your throat is killing you, it hits the spot.

(We may have gone through a bit of sickness during our many, many hours of not getting enough sleep.)

In a large pot, boil 6 cubes of chicken bouillon in 2 quarts of water.  Once the bouillon is fully dissolved add 6.5 cups of uncooked egg noodles, and boil until tender (about 10 minutes).  Add 2 undiluted cans of condensed cream of chicken soup to the noodle and bouillon mixture.  Also add 3 cups of cooked chicken, cubed or shredded.  Stir until the cream of chicken is all mixed through.  Allow the mixture to be heated through.  Remove the pot from the heat and stir in 1 cup of sour cream until thoroughly mixed.  Sprinkle with parsley.

The soup makes 10-12 servings.  It reheats up nicely, although you might need to add a bit of milk or water when heating it up.
