I started preparing yesterday afternoon for a simple lunch with a friend. Neither of us was able to go home to family this holiday and both of us have a lot of homework since its the last two weeks of classes.
So. I used the whole chicken in the a crock pot recipe from last fall. Skin the chicken and wash. Use fresh sage, thyme, marjoram, salt and pepper as a dry rub. You can leave the chicken to marinate in the rub for up to 24 hours. I stuffed it with cooked wild rice, mini bella mushrooms, carrots, and onions. Put it in the crock pot for 4-5 hours on high. It makes the house smell amazing.
We also made roasted asparagus (450* for 12 minutes with some olive oil, salt, and pepper) and I made a fresh loaf of bread.
It was a good meal.
