I also had a salmon fillet thawing on my counter and wasn't sure what I wanted to do with it. So, of course, my first instinct was to search 'salmon' on foodnetwork.com

They were delicious. I didn't use canned salmon, per the recipe. I gave the salmon fillet about 4 minutes on each side in a skillet I sprayed with cooking spray. Then let it cool a bit before I broke it apart. I didn't really measure anything. I also used just a bit of canola oil on the bottom of another skillet for frying purposes - maybe 1/4 an inch. It was the perfect amount and I didn't feel the croquettes were super oily.
The quinoa - this is only the second time I've made it. I didn't wash it enough - it was a little bitter still. I threw chives, garlic, and a small pat of butter and stirred that in after the quinoa had finished boiling. Overall it was good, but I made too much.
And really, who doesn't love steamed broccoli?
